Light country salad recipe details
A light and unusual salad for hot summer days. Can be eaten on the spot, or made from the night before chilled. A really quick light dish for the hot summer days…and it looks as good as it taste!

Ingredients
Serves: 2- 1 medium to large cucumber (seedless if you can find one)
- 1 medium to large firm tomato
- 1slice of onion (I prefer Vidalia)
- 1 handful of RED clover tops. They should be easy to find in your own yard. Make sure to use only the tops and not the stems.
- 1 tablespoon mayonnaise or mayo substitute
- 1/2 tablespoon parsley (dried or fresh)
- 1 dash each of paprika, salt and pepper
Preparation method
Prep: 10 mins1. Peel and dice the cucumber, dice the tomato and onion to pieces about 1/4 inch, and add it all in a medium size bowl. Add all the remaining ingredients except for the mayo to the bowl. Stir gently only enough mayonnaise for everything to be only slightly coated. The juices from the cucumbers and tomato will already give it “soup”, so ya don’t want to overdo it, but…add to you own taste.
