Light Mushroom Side Dish recipe

Ingredients
1 kg | mushrooms, sliced |
1 | onion, chopped |
2 clove(s) | garlic, minced |
½ tbsp | oil |
150 g | ham, diced |
200 g | cherry tomatoes, halved |
1 bunch(es) | parsley, chopped |
some | salt and pepper |
50 ml | vegetable stock |
Instructions
In a saucepan, heat the oil. Add the garlic and the onion. Fry over medium heat until lucent. Pour in the stock and add the mushrooms, cover and simmer over low heat for 10 minutes, stirring occasionally.
Stir in the ham and the tomatoes. Cook uncovered until all the liquid has evaporated. Season to taste with salt and pepper.
Serve sprinkled with parsley.
