- Ingredients
- Six 1/2-cup ramekins
- 12 large eggs
- 6 Tablespoons buttermilk
- 3 heaping teaspoons grated lemon zest
- 1/2 teaspoon lemon oil
- 12 heaping Tablespoons shredded Gouda Cheese
- 1/8 teaspoon ground black pepper

Preheat oven to 350 degrees. Set ramekins on a shallow baking tray. Spray the ramekins with nonstick cooking spray. Set aside.
In a large bowl, whisk together the eggs, buttermilk, lemon zest and lemon oil until well blended. Fold in the shredded Gouda, then divide the mixture between the 6 ramekins, about 1/2 cup per ramekin. Sprinkle black pepper over the top of each.
Bake for 20 to 25 minutes or until cooked through and slightly puffed. Let sit minutes before serving. The puffs will “fall” as they sit.
To serve, set the ramekin on a plate, add a muffin or scone and garnish.
