Lemon Tofu recipe

Ingredients
500 g | tofu, diced into chunks |
1 medium | onion, chopped |
250 ml | water |
½ | lemon, sliced crosswise and very thing, seeds removed |
2 | carrots, sliced |
1 tbsp | soy sauce |
¼ tsp | red pepper flakes, crushed |
1 tsp | curry powder |
1 tsp | vegetable oil |
Instructions
Combine lemon slices, water, oil, onion, carrots, soy sauce, pepper flakes, and curry powder in a pan and bring to a boil.
Cover and simmer over medium heat for about 20 minutes. Liquid should reduce by half.
Add tofu and continue to simmer 10 minutes longer or until most of the liquid is gone. Serve hot.
