Ingredients
the peel of 2 organic unwaxed lemons | |
1 l | freshly pressed lemon juice |
1 kg | caster sugar |
Instructions
Pour the lemon juice into a large glass bowl; add the lemon peel and sugar. Stir with a long handled spoon and put aside for a couple of hours stirring occasionally until the sugar is completely dissolved.Transfer to a large heavy based saucepan and bring to the boil once. Strain the cooled down mixture through a fine sieve and transfer into well dried bottles, seal and chill immediately.
