Ingredients
200 g | flour |
½ sachet | baking powder |
½ tsp | bicarbonate of soda |
½ tsp | salt |
120 g | butter, softened |
2 tbsp | lemon juice |
1 tsp | lemon extract |
240 g | ricotta cheese |
1 medium | egg |
150 g | sugar |
Instructions
Preheat oven 180°C.Combine flour,baking powder, baking soda and salt in bowl. Mix well. Add sugar and butter and beat until light and fluffy. Add in ricotta and beat again. Add egg, lemon juice and lemon extract.
Divide batter into muffin tins and bake about 15-20 minutes or until lightly golden brown.
