Lemon pudding cake recipe details
- Ingredients Cake:
- 2-1/2 cups sifted all-purpose flour
- 1-1/2 cups granulated sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 cup water
- 1 teaspoon vanilla
- 4 egg whites
- Pudding:
- 1 cup sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 2-1/4 cups milk
- 3 egg yolks
- 3 Tablespoons soft butter
- zest from 1 lemon
- 1/2 cup lemon juice
This cake is very moist and full of citrus flavor.
Cake:Combine flour, sugar, baking powder, and salt. Cut in shortening until gravy consistency. Add water and vanilla. Beat for 5 minutes. Beat and fold in egg whites, then pour into two 9-inch prepared pans. Bake at 350 degrees for 45 minutes.
Pudding:Mix sugar, cornstarch, salt, and milk. Cook until thick, stirring constantly. In separate bowl, stir hot mixture into egg yolks. Stir in butter. Stir in lemon zest and lemon juice. Cool to room temperature before assembling cake.
