Lemon Loaf recipe
- 8 ounces butter
- 2 cups sugar
- 4 eggs
- Grated rind of 2 lemons
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup sugar dissolved in juice of 2 lemons
Cream butter and sugar. Add eggs one at a time; beat well. Add lemon rind. Sift dry ingredients and add alternately with milk. Pour into 3 medium loaf pans.
Bake at 350 degrees about 45 to 60 minutes. Turn from pan to cake racks. Drizzle lemon-sugar mixture over loaves.
Hint: Fix ahead of time and freeze some.
