Aunt min's rye recipe details
- Ingredients:
- 1 cup warm water
- 2 Tablespoons yeast
- 1/2 cup melted butter
- 2 eggs
- 1/4 cups brown sugar
- pinch of salt
- 1/4 cup fennel seed
- 1/4 cup molasses
- 1 cup rye flour
- 3 to 4 cups white flour
This has been served in bread baskets at the West Mountain Inn for nearly 2 decades and is from Swedish roots in Nebraska.
Combine warm water and yeast, let stand 5 minutes. Add melted butter and eggs (room temperature). Add remaining ingredients to this mixture. Add rye flour, and use white flour to achieve the consistency of bread dough. Proof dough until doubled in size. Form into three 1-pound loaves and place in greased loaf pans. Proof again until double in size. Bake in 350-degree oven until done, approximately 20 to 30 minutes.
