Lemon Drops recipe

|600 g||granulated sugar|
|½ tsp||cream of tartar|
|1 tbsp||cream of tartar|
|lemon essence, to taste|
In a small pan combine water, sugar and cream of tartar and bring to a boil. Cook until the mixture becomes pale yellow.
Remove from the heat and add lemon essence to taste. Stir.
Turn out mixture onto an oiled marble slab. Sprinkle the 1 tbsp of cream of tartar onto the mixture and knead in thoroughly.
Form into thin rolls and then cut into small pieces. Form into small marble sized balls by hand. Sift with icing sugar and allow to dry thoroughly.
