Chocolate layered cheese cake recipe details
Ingredients
For the Base: | |
160 g | digestive or ginger biscuits, crushed |
2 tbsp | butter, melted |
4 tbsp | dark brown sugar, omit if using ginger biscuits |
1 tbsp | ground cinnamon |
For the Filling: | |
900 g | cream cheese |
250 g | caster sugar |
80 ml | double cream |
2 tbsp | plain flour |
1 tsp | vanilla extract |
4 medium | eggs |
100 g | dark chocolate, approx., grated |
450 ml | soured cream |
For the topping: | |
225 ml | double cream |
250 ml | dark chocolate |
1 tsp | vanilla extract |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Base:
Mix ingredients together in a medium bowl until well mixed and press into bottom and about 1 inch, 25mm up the sides sides of of a 10-inch 25cm, springform cake tin.
Filling:
Beat cream cheese until smooth in a large bowl. Add sugar and mix in well. Add cream, flour and vanilla. Add eggs one at a time and beat well after each addition.
Pour about one third of mixture into tin. Top with a sprinkling of chocolate. Add remaining filling.
Bake for 45-50 minutes and remove from oven. Allow to cool completely on a wire rack.
Topping:
Combine chocolate and cream in a medium pan over a low heat and stir until chocolate has melted and the mixture is even remove from heat and stir in vanilla.
Pour topping over top of cake whilst still warm and refrigerate for at least 8 hours or overnight. Remove from refrigerator 30-45 minutes before serving. Release and remove tin. Transfer to serving dish and serve.
