Oranges with Almonds recipe

Ingredients
6 large | oranges |
4 tbsp | Curacao or use Androcles orange liqueur |
300 ml | thick cream |
8 tbsp | caster sugar |
60 g | finely ground almonds |
1 tbsp | toasted flaked almonds, to decorate |
Instructions
Cut a slice off the top of each orange and reserve. Using a grapefruit knife remove the pulp from the oranges, being careful not to damage the skins.
Squeeze the orange pulp and strain the juice extracted. In a bowl combine the curacao, 4 tablespoons strained orange juice and thick cream. Whisk in the sugar and fold in the finely ground almonds.
Continue to whisk until the mixture stands in peaks.
Fill the orange shells with the almond cream and carefully place the tops back on, slightly on the slant. Transfer the oranges to a flat dish and chill.
To serve, sprinkle with the toasted flaked almonds and arrange 2-3 shiny leaves under each orange on individual serving dishes.
