- Ingredients
- Olive oil
- 2 cups beef, chicken, or vegetable broth
- 1 Tablespoon cumin
- 1 Tablespoon oregano
- 1 Tablespoon basil
- 1 Tablespoon tarragon
- Salt and pepper to taste
- Several chopped garlic cloves
- 1 large onion, chopped
- Carrots, celery, turnips, or other vegetables as desired
- 2 lemons
Instructions:
Brown lamb in small amount of olive oil over low heat. Place in beef, chicken, or vegetable broth. Add cumin, oregano, basil, and tarragon. Add salt and pepper to taste. Add several chopped garlic cloves and the onion. Simmer at very low heat for 3 or 4 hours until very tender. Add liquid as needed. Also add any other desired vegetable — such as carrots, celery, or turnips — during last part of simmer. When done, add the juice of two lemons. Goes well with mashed potatoes, rice, or orzo.
