Leg of lamb in red wine sauce recipe details
Ingredients
1 | leg of lamb, bones removed, tied with kitchen string |
6 tbsp | olive oil |
½ l | vegetable stock |
salt and white pepper | |
1 clove(s) | garlic, minced |
1 sprig(s) | rosemary |
125 ml | red wine |
Instructions
In a roasting tin, heat the oil. Season the meat with salt and pepper. Fry until golden brown all around. Pour in 200ml of the stock and add the garlic and rosemary.Preheat the oven to 220°C. Roast the leg of lamb for 30 minutes. Reduce the heat to 180°C, turn the meat and roast for approximately 60 more minutes, basting with the gravy every now and then. Add more stock if necessary. When the meat is tender, remove the roast from the oven, take the leg of lamb out of the tin, wrap into aluminium foil and allow to stand for 5 minutes.
Pour the wine and the remaining stock into the tin. Bring to a boil and cook until the sauce is reduced to a half. Season to taste with salt and pepper.
Remove the string from the roast and carve the meat into slices. Serve together with the sauce.
