Ingredients
2 | eggs, boiled, peeled and sliced |
1 small | cucumber, peeled, seeds removed and diced |
salt and pepper | |
1 | red bell pepper, trimmed and diced |
1 can(s) | corn, rinsed and drained |
½ head(s) | romaine lettuce, leaves separated |
1 can(s) | tuna, drained |
100 g | yoghurt |
100 g | mayonnaise |
curry powder | |
lemon juice | |
2 tbsp | parsley, chopped |
Instructions
Mix the mayonnaise with yoghurt and season to taste with lemon juice, curry, salt and pepper.Layer the vegetables, tuna, eggs and the lettuce into 4 wide glasses. Drizzle with the dressing and sprinkle with parsley.
