Lavender ice cream recipe details
Ingredients
2 tbsp | dried lavender |
6 large | eggs, yolks only |
125 g | caster sugar |
1 tsp | vanilla extract |
250 ml | milk |
250 ml | double cream |
Instructions
In a heavy-based pan bring the cream and milk gently to a boil. Remove from heat and add the lavender. Cover the pan and allow to steep for about 30 minutes. Pour mixture trough a fine sieve into a bowl and discard the solids.In a small bowl whisk the egg yolks with the sugar until thick and pale. Add a little of the warm milk and whisk vigorously. Return the yolk mixture to the main cream mixture and return to the pan.
Heat gently on a medium heat until the mixture thickens to coat the back of a spoon. Strain the custard through a fine meshed sieve to remove any undissolved sugar crystals. Cover and refrigerate for about an hour. If time is of the essence, plunge the pan into a bowl or sink part-filled with iced water.
Remove custard from refrigerator and pour into ice cream maker and freeze according to manufacturers’ instructions. Pour or spoon finished ice cream into a covered freezer-proof container and freeze until required, up to 2 days. Remove about 10 minutes in advance of serving to soften in a slightly warm place.
If wished, it may be served directly from the ice cream maker.
