Instructions
The number of servings is arbitrary as pastries can vary dramatically in size. Sometimes only the pastry is glazed but at other times both the pastry and the filling are glazed. It is used quite sparingly, but the actual number of pastries it will cover cannot be given.Sift the sugar into a bowl and gradually add the lemon juice, stirring until combined.
The icing is thin and runny, but you can vary the amount of lemon juice by about +/- ½ tsp to produce a thinner or thicker mix, according to needs.
Use immediately and discard unused portion once it begins to harden.
