Lamb kebab with vegetables recipe details
Ingredients
1 | loin of lamb, cut into 3cm cubes |
3 | bell peppers, red, green and yellow, cleaned and cut into 3cm squares |
3 | red onions, quartered |
1 | lime, cut into 6 wedges |
olive oil | |
salt | |
For the marinade: | |
1 tsp | ground coriander |
1 tsp | ground cumin |
2 tsp | harissa |
1 dash(es) | lemon juice |
Instructions
In a bowl combine the ingredients for the marinade. Add the meat, toss until well coated and marinate for 4 hours.Thread the meat in turn with the vegetables onto skewers. Drizzle with olive oil and grill for approximately 10 minutes, turning the skewers occasionally.
Season the skewers with salt and serve with lime wedges and Pita bread.
