Ingredients

For the sauce:
1 tbsp butter
1  onion, finely chopped
1  carrot, finely chopped
50 g lean ham, finely chopped
50 g cured calf’s tongue, cut into small cubes
1  hard boiled egg
50 ml red wine vinegar
50 ml port
500 ml chicken stock or lamb stock
2  blades of mace
1  bay leaf
10  juniper berries, crushed
½ tsp dried thyme
salt and freshly ground black pepper, to taste
For the cutlets:
8  lamb cutlets, trimmed and bones scraped clean
2 tbsp lard
3 tbsp ham, minced
3 tbsp breadcrumbs
1  egg
salt and freshly ground black pepper, to taste

Instructions

For the sauce:
In a saucepan, heat the butter, add onion, carrot, tongue and ham and cook stirring until golden. Add the port and the vinegar and boil down until the liquid has evaporated. Add the stock and all the spices and bring to a boil. Cook over low heat for approximately ½ an hour. Chop the hard boiled egg finely and add to the sauce. Season to taste with salt and pepper.

For the cutlets:
Season the cutlets with salt and pepper. Whisk the egg. Mix the ham with the breadcrumbs. Turn the cutlets first in the egg, then in the breadcrumb mixture and make sure the meat is well coated. Place into the fridge for 15 minutes.

In a skillet heat the lard and fry the cutlets until golden brown and crispy on both sides. Serve with the sauce, together with boiled new potatoes and vegetables, e.g. snow peas or green beans.
