Ingredients
200 g | tofu |
some | oil |
1 tsp | stock powder (or 1/2 tsp salt) |
1 tbsp | galangal, chopped |
3 tbsp | lemongrass, chopped |
1 tbsp | Thai shallots, chopped |
1 tbsp | garlic, chopped |
2 tbsp | rice powder (rice roasted until golden, then ground) |
1 tbsp | tamarind juice (or little less) |
salt | |
1 tsp | palm sugar |
cilantro | |
spring onions | |
4 | Thai shallots, sliced |
Holy basil (Bai Horapa) | |
5 | dried chilies, fried or roasted |
1 tbsp | lemon juice or more |
To serve: | |
cucumber, peeled and sliced | |
yard-long beans, trimmed | |
red cabbage, shredded |
Instructions
Crumble tofu and fry in some hot oil, add stock powder or salt. Transfer into a bowl and let it cool.Heat some oil and fry lemongrass, galangal, garlic and shallots for about 3 minutes, stir well. Add to the tofu.
Mix chilies, lemon juice, tamarind juice and some salt. Add to the tofu, and add more lemon juice and sugar if needed. Add rice powder. Now add herbs, spring onions and sliced shallots and season to taste.
Arrange the salad on a big plate and garnish with sliced cucumber, cabbage and yard-long beans.
