Ingredients
1 tsp | brown sugar |
¼ tsp | freshly ground black pepper |
80 ml | olive oil |
80 ml | red wine vinegar |
150 g | mixed baby greens |
2 | green onions, chopped |
50 g | celery, chopped |
1 | carrot, grated |
50 g | broccoli, devided in even sized flowerets |
50 g | cauliflower, devided in even sized flowerets |
1 | avocado, peeled and diced |
1 tsp | fresh lemon juice |
80 g | pine nuts |
120 g | kumquats, sliced |
60 g | Parmesan cheese, grated |
Instructions
For the dressing, combine brown sugar, pepper, olive oil and red wine vinegar in a small container with lid. Shake the dressing well.
In a large bowl, mix together baby salad greens, green onions, celery, carrot, broccoli and cauliflower. Sprinkle the avocado with lemon juice and add into the salad.
Spread sliced kumquats, grated parmesan cheese and pine nuts over the salad.
Serve with the dressing.
