Ingredients

4  kumquats
1 tbsp sugar
½ tbsp orange zest
500 ml water
4 sprig(s) watercress, as decoration
clotted cream or double cream

Instructions

Peel and segment the kumquats. Place the peel and fruit into a saucepan with the orange zest, water and sugar and cook gently until boiling. Reduce heat to simmer and cook for a further 15 minutes.

Remove kumquat peel with a slotted spoon and serve immediately, with a dash of cream and a sprig of watercress
