Ingredients
Serves: 8- 1 fryer chicken
- 1 onion, chopped
- 3/4 cup chopped celery
- 1 teaspoon salt
- 1 (10 ounce) can cream of chicken soup
- 1 (10 ounce) can cream of mushroom soup
- 12 tortillas, roughly chopped or torn
- 1 green bell pepper, chopped
- 1 (14 ounce) can tomatoes, chopped
- 1 cup grated sharp Cheddar cheese
Preparation method
Prep: 20 mins | Cook: 1 hour 50 mins1. Bring large pot of water to boil (just enough to cover chicken). Add chicken, onion, celery, and salt; simmer until chicken is tender, about 1 hour. Remove bird, onions, and celery from water. Cool, and chop the meat. (Discard onions and celery.)
2. Continue cooking the broth over medium heat until water measures about 1 1/2 cups. Add the canned soups and stir to incorporate.
3. Preheat oven to 350 degrees F and butter a 13×9-inch baking dish.
4. Arrange tortilla pieces in the bottom of the baking dish. Then layer chicken meat, peppers, tomatoes, and the soup mixture.
5. Cover casserole with foil and bake for 35 to 40 minutes. Remove foil, sprinkle with cheese, and cook 10 more minutes, until cheese is hot and bubbly.
