Ingredients
Serves: 6- 2 teaspoons olive oil
- 6 ounces kielbasa, chopped
- 1 large yellow onion, chopped
- 1 rib celery, chopped
- 1 clove garlic, minced
- 6 cups chicken broth
- 2 cups water
- 8 ounces kale, stemmed and leaves sliced
- 3/4 pound red potatoes, diced
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon Tabasco(R) sauce
- 1/4 teaspoon salt
- 1 1/2 cups canned red kidney beans
Preparation method
Prep: 10 mins | Cook: 50 mins1. Pour oil into a soup pot and place over medium heat. Cook kielbasa slices in hot oil until crisp, then transfer to a bowl.
2. Cook onion and celery in the skillet for about 5 minutes, then stir in garlic and cook for 30 more seconds. Pour in the broth, water, kale, and crispy kielbasa. When the liquid comes to a boil, simmer on medium-low heat for 10 minutes to wilt kale.
3. Add remaining ingredients except beans and simmer, covered, on medium-low heat for 20 minutes. Stir in beans, heat through, and serve.
