Kale and Mini Meatballs

Ingredients
Serves: 4- 1/2 pound ground lamb
- 1/2 pound ground beef
- 1 tablespoon chopped fresh oregano
- Salt and pepper
- 2 tablespoons olive oil
- 1 head garlic, cloves finally chopped
- 1 bunch kale, stemmed and shredded
Preparation method
Prep: 20 mins | Cook: 35 mins1. In a bowl, gently stir lamb, beef, oregano, and salt and pepper together. Form into 1/2-inch balls.
2. Pour olive oil into a saucepan placed over low heat. Add 1 tablespoon water and the garlic. Cook garlic in hot oil for about 6 minutes. Don’t brown the garlic, just saute gently.
3. Pour in 3 cups of water and kick the heat up to medium-high. When water boils, simmer for 5 minutes on low, then add meatballs. Put the lid on the saucepan and simmer on low for 10 more minutes.
4. Dump in the kale, re-cover, and simmer for 10 minutes. Serve in bowls.
