Khao phad talee recipe details
Ingredients
200 g | rice (Thai fragrant rice) |
1 tbsp | butter |
1 tsp | oil |
½ | onion, chopped |
2 | eggs |
some | oil to fry eggs |
150 g | seafood like shrimp and squid |
100 g | vegetables of your choice, finely chopped (bell peppers, green, red, yellow, carrots) |
some | spring onions, chopped |
some | cucumber, sliced, to garnish |
stock powder | |
white soy sauce | |
sugar |
Instructions
Cook rice, leave it slightly undercooked.Whisk eggs with some light soy sauce. In a pan, heat some oil and make scrambled eggs.
Take a big pan and heat up butter and oil. Add onions and vegetables and fry until soft. Season well, using a generous amount of stock powder (instead of salt), some white soy sauce, and about ½ tablespoon of sugar. Try to season good enough so that the rice will not need more seasoning later.
Pat seafood dry (if still wet, the rice will get too soft), add to the vegetables and fry for some minutes.
Now, add the rice, mix everything well and stir constantly. Fry for some minutes. Then add scrambled egg and spring onions, mix again and serve on a plate with slices of cucumber.
