Ingredients

100 g butter, softened
50 g caster sugar
150 g flour
50  rice, ground

Instructions

Preheat oven to 170°C.

Combine butter and sugar together and mix until creamy. Gradually stir in the flour and ground rice. Mix well and then press into an 18 cm (7 inch) round sandwich tin. Pinch up the edges with a finger and thumb.

Mark into 8 triangles with a sharp knife and bake at 170°C for about 40 minutes, until pale in colour.

Leave in the tin for 5 minutes, cut into 8 triangles. Dust with caster sugar.

Remove from the tin when cold and then store in an airtight container.
