Great spice! Greater flavor! And sooooooooo easy! Buzz up the spices the day before, spread on pork, refrigerate, and done! The next day, heat up the grill and the aroma will have them swarming like bees!

Ingredients
Serves: 8- 3 tablespoons olive oil
- 1 1/2 teaspoons salt
- 1 onion, diced
- 1 to 2 jalapeno chilies, seeded and cut into pieces
- 3 cloves garlic
- 2 tablespoons brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cumin
- 1 teaspoon ground allspice
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 1 cup fresh cilantro leaves
- 2 (1 pound) pork tenderloins
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 8 hours, marinating1. Place all ingredients, except the tenderloins, into the bowl of a food processor. Process until very finely chopped. Place the pork tenderloins in a zip top plastic bag, add half of the marinade, seal, and refrigerate overnight. Reserve the remaining marinade.
2. Preheat grill or barbeque for medium heat and oil the grates.
3. Grill the tenderloin until it reads 145 degrees F on a meat thermometer, about 30 minutes. Halfway through grilling, when the outside has cooked, brush with the remaining marinade.
4. Take the tenderloins off of the grill, tent with foil, and let rest in a warm place for 10 minutes. Slice, serve and ENJOY a succulent well spiced tenderloin!Alternate Method
No grill OR 4 feet of snow outside and you can’t find your grill? NO PROBLEM!!! Preheat oven to 350 degrees F. and roast in oven for 35 to 45 minutes.
