Ingredients
Serves: 10- 1 dozen medium potatoes, cut into bite-size pieces
- 2 medium onions, chopped
- 1 pound smoked bacon, cut into 1-inch pieces
- 1 (28 ounce) can diced tomatoes
- 1 (28 ounce) can crushed tomatoes
- 1 (24 ounce) can red kidney beans
Preparation method
Prep: 10 mins | Cook: 2 hours | Extra time: 5 mins1. Cook potatoes, onions, and bacon together in a large saucepan. Once cooked, do not drain.
2. Add tomatoes and kidney beans and let simmer for 2 hours, stirring occasionally.
