Juicy Bacon Wrapped Pork Fillet recipe

Ingredients
600 g | pork fillet |
2 tbsp | fig mustard |
10 slice(s) | streaky bacon |
8 sprig(s) | thyme, chopped |
2 tbsp | cognac |
salt and freshly ground black pepper | |
1 tbsp | oil |
250 ml | vegetable stock |
1 tsp | cornflour |
Instructions
Season the meat with salt and pepper and spread with the mustard. Wrap with the bacon.In a roasting pan heat the oil. Add the meat and fry until golden all around. Take out of the pan. Add the stock and the thyme into the pan and bring to a boil. Return the meat, cover and simmer over very low heat for 15 minutes.
Again take the meat out of the pan. Strain the sauce into a saucepan and bring to the boil. Season to taste with salt and pepper. Mix the cornflour with a dash of water and pour the mixture into the sauce. Cook until thickened and refine with the cognac.
Cut the meat into slices and serve on plates, drizzled with the sauce.
