Ingredients
For the crumbles: | |
150 g | rusk |
100 g | coconut flakes |
30 g | sugar |
150 g | butter |
For the sponge: | |
4 | eggs |
3 tbsp | hot water |
120 g | sugar |
1 tsp | vanilla extract |
150 g | flour |
2 tsp | baking powder |
For the topping: | |
3 glass(es) | apple sauce, approx. 370g each |
400 g | single cream |
2 tbsp | icing sugar, sieved |
1 leaf | gelatin |
To garnish: | |
1 large | red apple |
25 g | sugar |
50 g | coconut flakes |
Instructions
Crumble the rusk and combine in a bowl with the coconut flakes, the sugar and the butter. Mix with a hand blender to fine crumbles. Evenly divide the crumbles on a greased baking tray (30*40 cm) and press onto the bottom firmly.Preheat the oven to 200°C.
For the sponge:
Whisk the eggs and the water until creamy. Trickle in the sugar and the vanilla extract.
Combine the flour and the baking powder and sieve on top of the egg mixture and fold in. Gently spread the sponge on top of the crumbles.
Bake the base for approximately 20 minutes.
Place the baking tray on a wire rack and place a cake frame around.
Divide the apple sauce on the warm cake and flatten. Leave to cool.
Soak, squeeze and dissolve the gelatin. Whisk the single cream with the icing sugar until stiff, then combine with the dissolved gelatin. Evenly divide the cream on the apple sauce and flatten.
Quarter and core the apple, and cut into thin slices. In a large skillet, caramelise the sugar. Add the apple slices side by side and cook for approximately 2 minutes in the sugar, turning once. Allow to cool completely.
Roast the coconut flakes in a dry skillet until yellow and allow to cool completely on a plate.
Cut the cake into slices and garnish the slices with the apple slices and toasted coconut.
