Bacon-Wrapped Citrus Shrimp

This easy appetizer is simple to make and is really impressive. This can be made on the grill, but are good quickly sauteed in a skillet too!

Ingredients
Makes: 12 shrimp
- 12 pieces canned pineapple chunks
- 12 jumbo shrimp, deveined
- 6 slices bacon, cut in half
- 12 toothpicks
- 1/2 cup lime vinaigrette salad dressing
- 1/4 cup green onions
Preparation method
Prep: 10 mins | Cook: 10 mins | Extra time: 30 mins, marinating
1. Place a chunk of pineapple in curve of the shrimp and wrap with 1 half slice of bacon; secure with toothpick. Repeat with remaining shrimp. Place into a bowl and toss with the lime vinaigrette. Marinate in the refrigerator 30 minutes.
2. Heat a non-stick skillet over medium heat. Once pan is heated place shrimp in pan and cook about 5 minutes on each side until bacon is crisp.
3. Remove from pan, place on small serving tray, sprinkle with green onions and serve.
