John's kickin barbecue chicken recipe details
A marinade for chicken fajitas or chicken breasts, for a great kick of heat and spice without being overpowering.
Ready in: 1 hour 30 mins
Ingredients
Serves: 4- 4 tablespoons olive oil
- 2 tablespoons dried jalapenos
- 2 tablespoons canned hot peppers
- 2 teaspoons brown mustard
- 1 teaspoon chili powder
- 1 cup fresh basil
- 4 boneless chicken breasts
Preparation method
Prep: 10 mins | Cook: 20 mins | Extra time: 1 hour, marinating1. In a blender, combine olive oil, jalapenos, peppers, mustard, chili powder, and basil. Blend thoroughly.
2. Reserve a quarter of the marinade.
3. Marinate chicken breasts for 1 hour in fridge with remaining marinade.
4. Heat grill to Medium and lightly oil grate.
5. Remove chicken from marinade and place on grill. Cook for about 7 minutes on each side, until meat is no longer pink in the middle. Brush reserved marinade on chicken throughout grilling time. Serve.
