Jim's favorite salad recipe details
- Ingredients for Dressing
- 1 large whole egg
- 1 large egg yolk
- 1/2 cup sugar
- 1/2 teaspoon dry mustard
- 1-1/2 teaspoons cornstarch
- 1/4 cup distilled white vinegar
- 1/4 cup water
- 1/4 teaspoon salt
- 2 Tablespoons unsalted butter, softened
- 1/2 cup mayonnaise
- Ingredients for Salad
- 4 cups small broccoli flowers, blanched if desired
- 1 cup raisins
- 1 cup sliced mushrooms
- 1/2 cup chopped red onion
- 6 slices of bacon (cooked crisp and crumbled)
Make the dressing: In a small bowl whisk together the whole egg, the egg yolk, sugar, mustard and cornstarch. In a saucepan combine the vinegar, water, salt and bring the mixture to a boil over moderate heat. Whisk in the egg mixture and cook one minute, whisking until thickened. Remove pan from the heat and whisk in the butter and mayonnaise. Cover and chill. Make the salad in a large bowl, combining the broccoli, raisins, mushrooms, onion and bacon, pour the dressing over the salad and toss well.
