Broccoli loaf recipe details
Ingredients
soft butter, to grease the tin | |
breadcrumbs, to coat the tin | |
100 g | butter |
350 g | broccoli |
100 g | ham |
100 g | flour |
40 g | durum wheat |
4 tsp | baking powder |
50 g | freshly grated Parmesan cheese |
pepper, freshly ground | |
50 ml | milk |
2 | eggs |
Instructions
Grease the loaf tin (25*11 cm) and coat with breadcrumbs.Cut the broccoli into small florets, rinse and drain. Remove the skin of the small broccoli stems and cut the stems in small cubes. Bring water to the boil, add a pinch of salt and blanch the broccoli florets and stems for approximately 2 minutes. Drain, rinse with cold water and drain again.
Dice the ham.
Preheat the oven to 180°C (top and bottom heat).
For the dough:
Combine the flour, the durum wheat, the baking powder, the Parmesan and some pepper in a bowl and whisk with a wire whisk. Add the milk, the eggs and the butter. Stir until well combined. Fold in the broccoli and the ham (the dough doesn’t need salt, if the ham is well salted).
To bake:
Spoon the dough into the loaf tin, flatten and transfer the tin into the preheated oven. Bake for 40-45 minutes.
Remove from the oven and place on a wire rack to cool. After 10 minutes, remove the loaf from the tin and allow to cool completely.
