Ingredients
Serves: 6- 1 head broccoli, cut into florets
- 2 eggs
- 2 egg whites
- 1/3 cup grated Parmesan cheese
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 2 tablespoons canola oil
- 1 1/2 cups salsa
Preparation method
Prep: 20 mins | Cook: 30 mins1. Place broccoli florets in a microwave-safe bowl and sprinkle with 3 tablespoons of water. Cover tightly with plastic wrap and microwave on HIGH for 3 to 4 minutes, until broccoli has just turned tender. Allow to cool slightly, then chop.
2. Whisk eggs and egg whites together in a mixing bowl. Stir in cheese, flour, salt, garlic powder, and black pepper, then add broccoli.
3. Pour 1 tablespoon canola oil in a large skillet and place over medium heat. Cook batter in oil in batches of several 2-tablespoon portions (flatten slightly), frying until golden. This will take 6 to 8 minutes per batch.
4. Serve on a platter with salsa in a bowl for dipping.
