Jeff's clam chowda recipe details
This is a hearty clam chowder with lots of chopped clams, bacon, and some fresh dill to finish it off.
Ready in: 1 hour
Ingredients
Serves: 8- 6 (6 1/2 ounce) cans chopped clams
- 11 tablespoons butter
- 1 tablespoon bacon fat
- 2 cups chopped onion
- 1 1/2 cups diced celery
- 4 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/4 teaspoon fresh ground black pepper
- 3/4 cup flour
- 4 cups clam juice
- 1 quart light cream
- 6 cups cubed Maine potatoes
- 1/4 cup chopped thick cut bacon
- 1 tablespoon chopped fresh dill
Preparation method
Prep: 15 mins | Cook: 45 mins1. Drain clams; reserve juice.
2. Melt butter and bacon fat in stock pot over medium heat. Add onion, celery, garlic, salt, and pepper and cook until onion is opaque. Add flour; stir until absorbed.
3. Stir in clam juice until thick, and stir in cream. Stir until thick, just before boiling. Add potatoes, bacon, clams, and dill. Continue to cook on low until potatoes are tender.
