Jaybird's eat til you re beat nachos recipe details
This creamy, spicy, slightly sweet nacho cheese sauce uses something I’ve never seen in a nacho cheese sauce/dip: cream of asparagus soup. It adds to the creaminess and some of the very slight sweetness. If you don’t eat meat, this dip is great by itself.
Ready in: 30 mins
Ingredients
Serves: 6- 15 ounce jar OR 1 pound block (cut in chunks) jalapeno processed cheese
- 1 (10 ounce) can cream of asparagus OR cream of celery soup
- 1 small can Green Giant(R) Mexicorn(R), drained
- 1 small can chopped black olives
- 1 medium tomato, chopped
- 1 pound ground beef
- 1 (1.25 ounce) package taco seasoning mix
- 3/4 cups cold water
Preparation method
Prep: 15 mins | Cook: 15 mins1. Cheese sauce:
2. Stove-top: Mix all ingredients except tomato in medium sauce pan and cover. Heat over low flame, stirring occasionally, for 15 min. or until melted (block cheese will take longer), being careful not to burn the mixture.
3. Microwave: Mix all ingredients except tomato in medium microwave-safe dish and cover. Heat 2-4 minutes or until melted (block cheese may take longer), being careful not to burn the mixture.
4. Meat:
5. While cheese mixture is heating, brown ground beef, drain, add taco seasoning and water, and simmer for 10 minutes.
6. For individual servings, place a small amount of the meat in a bowl, cover with generous amount of cheese mixture, top with some chopped tomato, and place tortilla chips in bowl around the mixture. For a help-yourself dip, put meat in the bottom of a medium bowl, pour on cheese mixture, top with tomatoes, and serve with corn chips.
