Chickpeas and lamb chops recipe details
Easy lamb chops served with the Mediterranean classics of olives and garbanzo beans, a.k.a. chickpeas.

Ingredients
Serves: 4- 1/4 cup olive oil
- 4 (8 ounce) lamb chops
- Salt and pepper
- 2 cloves garlic, chopped
- 1/2 cup pitted Kalamata olives, chopped
- 2 (15 1/2 ounce) cans garbanzo beans, rinsed
- 1 cup chopped fresh parsley
- Zest and juice of 1 lemon
Preparation method
Prep: 15 mins | Cook: 15 mins1. Pour 1 tablespoon oil into a skillet and set over medium-high heat. Sprinkle lamb chops with salt and pepper on both sides, then cook in hot oil for about 10 minutes, flipping once midway through cooking time, until cooked through. Set on a plate and cover with foil.
2. Pour 3 tablespoons oil into the skillet. Cook garlic and olives in hot oil for about 4 minutes, then stir in garbanzo beans. When beans are hot, stir in lemon zest, lemon juice, parsley, and salt and pepper to taste.
3. Serve lamb chops with the garbanzo beans spooned over each serving.
