Jason's stuffed chicken breasts recipe details
A rich and flavorful blend of mushrooms, cheese, and spices stuffed into tender and moist chicken breasts.

Ingredients
Serves: 8- 8 boneless, skinless chicken breasts
- 1/3 cup olive oil, divided
- 1 teaspoon white vinegar
- 3 tablespoons coarse ground black pepper
- 1 1/2 cups fresh mushrooms
- 1 tablespoon dried parsley
- 1/4 cup shredded Gruyere cheese
- 1/2 cup of bread crumbs, divided
- 1 clove garlic, minced
- 1 teaspoon onion powder
Preparation method
Prep: 20 mins | Cook: 40 mins1. Preheat oven to 350 degrees F (175 degrees C). Using a meat pounder pound chicken breasts until 1/4 inch in thickness.
2. Mix 1/4 cup of olive oil, vinegar, and black pepper in bowl and marinate chicken for 15 minutes.
3. Wash and remove stems from mushrooms. In a food processor mix mushroom caps, 1 tablespoon of olive oil, parsley, cheese, 1/3 cup bread crumbs, garlic, and onion powder. Mix until pureed (should be the consistency of pate).
4. Remove chicken from marinade and place in baking dish. Place 1 heaping tablespoon of filling on one side of the chicken breasts and fold the other side over. When finished sprinkle chicken with remaining bread crumbs and drizzle with remaining olive oil.
5. Bake in the preheated oven until bread crumbs turn brown, about 40 minutes.
