Ingredients
Serves: 4
- 1/2 cup jasmine rice, prepared according to package directions
- 1/4 cup hoisin sauce
- 2 scallions, finely chopped
- 1 clove garlic, finely chopped
- 6 basil leaves, thinly sliced
- 2 teaspoons finely chopped fresh ginger
- 4 (8 ounce, 1-inch thick) boneless pork chops, butterflied
- Salt and pepper
- 3 tablespoons olive oil
Preparation method
Prep: 20 mins | Cook: 45 mins
1. Preheat oven to 375 degrees F.
2. In a mixing bowl, combine cooked rice, hoisin sauce, scallions, garlic, basil, and ginger.
3. Place a portion of rice stuffing on each open-faced pork chop. Secure closed with toothpicks and sprinkle with salt and pepper.
4. Pour olive oil into large skillet and place over medium-high heat. Cook stuffed pork chops in hot oil for about 6 minutes to sear the outsides, then place in a 13×9-inch baking dish and bake for 25 minutes.
