Jalebi details
Ingredients
- Flour (maida) – 2 cups
- Semolina ( sooji) or rice flour (chawal ka aata) – 1 ½ tbsp
- Baking powder – ¼ tsp
- Yogurt – 2 tbsp
- Hot water – 1 ¼ cup
- Saffron ( zaafran) – ½ tsp
- Cardamom (ilaichi) – 2
- Oil – for frying
Instructions
- Beat thoroughly flour, semolina,yougurt, and ¾ cup water in a bowl
- Mix ¼ tsp saffron in remaining water and add to mixture
- Beat and set aside for 2 hours
- Beat batter again and set aside
- To make syrup, mix sugar in water and cook till it thickens
- Add remaining saffron and cardamom and remove from flame
- Heat oil in a wok, fill cone or muslin with jalebi mixture and fry pretzel- shaped jalebis in oil
- When jalebis become golden-brown take out on tissue paper
- Immerse in syrup for 5 minutes
- Remove jalebis when they have absorbed syrup and serve.
