Jalebi is a popular Indian sweet dish known for its crispy and syrupy texture. Made from a fermented batter of all-purpose flour, the mixture is deep-fried until golden brown and then soaked in a sugar syrup infused with cardamom and saffron. This delightful dessert is often enjoyed during festivals and special occasions.

Ingredients

  1. Flour (maida) – 2 cups
  2. Semolina ( sooji) or rice flour (chawal ka aata) – 1 ½ tbsp
  3. Baking powder – ¼ tsp
  4. Yogurt – 2 tbsp
  5. Hot water – 1 ¼ cup
  6. Saffron ( zaafran) – ½ tsp
  7. Cardamom (ilaichi) – 2
  8. Oil – for frying

Instructions

  1. Beat thoroughly flour, semolina,yougurt, and ¾ cup water in a bowl
  2. Mix ¼ tsp saffron in remaining water and add to mixture
  3. Beat and set aside for 2 hours
  4. Beat batter again and set aside
  5. To make syrup, mix sugar in water and cook till it thickens
  6. Add remaining saffron and cardamom and remove from flame
  7. Heat oil in a wok, fill cone or muslin with jalebi mixture and fry pretzel- shaped jalebis in oil
  8. When jalebis become golden-brown take out on tissue paper
  9. Immerse in syrup for 5 minutes
  10. Remove jalebis when they have absorbed syrup and serve.
