Jalapeno sausage and beef chili for the slow cooker recipe details
A double-team of meat gives this simple chili man-sized flavor. Spicy, but not overpowering. Inspired by Howard’s “Prize-Winning Chili.”

Ingredients
Serves: 12- 1 pound bulk hot sausage
- 1 pound ground beef
- 1 onion, chopped
- 1 green pepper, chopped
- 1 tablespoon chili powder
- 1 tablespoon olive oil
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 small jalapeno pepper, finely chopped (optional)
- 1 (28 ounce) can diced tomatoes
- 2 (15 ounce) cans pinto beans
- 1 cup water
Preparation method
Prep: 15 mins | Cook: 1 hour 15 mins1. In a large skillet, cook the onion and peppers in the olive oil over medium heat until onions are translucent, about 10 minutes. Add sausage (removed from casings) and ground beef, and brown until crumbly, stirring over medium heat, about 7 minutes.
2. Drain meat/veggie mixture of excess liquid, then transfer to a 6-quart slow cooker. Add remaining ingredients, stir well to combine, and cover. Cook on LOW for 8 hours.Tip
To thicken the chili, combine 2 tablespoons of cornstarch and 2 tablespoons of cold water in a small bowl. Slowly stir cornstarch mixture into stew with slow cooker set to HIGH, then repeat until desired thickness is reached.
Alternate MethodCook on HIGH for 4 hours.
