Ingredients
Serves: 4- 1 bunch kale
- 1 tablespoon olive oil
- 1 clove garlic, crushed
- 1 large white onion, chopped
- 2 teaspoons lime juice
- 1 jalapeno pepper, seeded and chopped
- Salt and black pepper, to taste
Preparation method
Prep: 10 mins | Cook: 15 mins1. With a small, sharp kinfe, cut the leafy part of the kale away from the stems. Discard the stems. Roll the kale leaves up and chop roughly.
2. Pour olive oil into a skillet and place over medium-low heat. Cook garlic and onion in hot oil for about 10 minutes.
3. Stir kale into the onions and bump up the heat to medium-high. Cook for 5 minutes, then add remaining ingredients, toss, and serve.
