Jake's world famous super bowl chili recipe details
To make chili you need to be in an excellent frame of mind. If the game sucks, at least your chili was ‘off the hook.’ Make sure everything is cool, all your cooking utensils are ready, your cans opened and accessible. Make sure the kitchen is free. No one should be spying on you or checking on what you’re doing in the kitchen. If all is clear and ready to go, then let’s do this!
Ready in: 2 hours 20 mins
Ingredients
Serves: 12- Tomato Slurry:
- 1 (15 ounce) can Del Monte(R) Petite Cut Diced Tomatoes with Jalapenos
- 4 chipotle peppers in adobo sauce
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons sofrito
- 1 tablespoon hot sauce (Louisiana)
- Spice Dump:
- 2 tablespoons garlic powder
- 2 tablespoons ground cumin
- 2 tablespoons onion powder
- 2 tablespoons paprika
- 6 tablespoons chili powder (just chilies)
- Meat:
- 1 pound hot Italian turkey sausage
- 2 tablespoons olive oil
- 1 pound meat loaf mix (beef, pork, veal)
- 1/2 pound beef fondue cubes
- Beer, Beans-n-Broth:
- 2 (28 ounce) cans Bush’s Best(R) Bold & Spicy Baked Beans
- 12 ounces stout beer
- 1/2 (14 ounce) can beef broth
- Extras:
- salt i
- instant mashed potatoes, enough to thicken if needed
Preparation method
Prep: 20 mins | Cook: 2 hours1. To make the ‘slurry’, place tomatoes, chipotle, onion, garlic, sofrito, and hot sauce in blender. Puree until it looks like a tomato smoothie. Set it aside.
2. Combine the spices together to make your “dump” mixture; set aside.
3. Remove casing from sausages with a knife. Heat oil in Dutch oven, brown sausage and remove from pot. Brown beef, add 2 teaspoons salt and 2 tablespoons of ‘dump’ mixture. When brown return sausages to pot and add beans and ‘slurry’” and 1 tablespoon of ‘dump’. Stir, add beer and broth. Reduce heat, cover, and simmer for 1 hour. Stir in 1 to 2 tablespoons mashed potato flakes (depends on the desired thickness). Add more of the ‘dump’ to taste and simmer for another 30 to 45 minutes. Taste to see if you might need a pinch or two of ‘dump’.Cook’s note:
Serve in bowls over white rice (or not) with fresh shredded cheese, scallions and sour cream. Or just leave the condiments out and let you party crowd serve themselves if they want. Eat and enjoy the game!!!
