I’ve been making this for so long, I don’t even remember where I got the idea for “Cajunized” tater salad.
It’s great chilled, but it’s just as good to eat as soon as you make it.
Ready in: 1 hour 45 mins
Ingredients
Serves: 12- 6 potatoes
- 2 tablespoons Creole seasoning
- 2 tablespoons Creole mustard
- 3/4 cup mayonnaise
- 3/4 cup Miracle Whip(R)
- 6 hard boiled eggs, chopped
- 1/4 cup onions, chopped
- 1/4 cup bell pepper, chopped
- 1/4 cup celery, chopped
- 2 heads garlic, roasted and smashed
- 1 pound Andoullie sausage, cooked and chopped
- 1 cup green olives, sliced
Preparation method
Prep: 1 hour | Cook: 45 mins1. Boil potatoes until fork tender; drain. Refrigerate until cold, then cut into 1-inch cubes. Leave the skin on.
2. Stir together the Creole seasoning, mustard, mayonnaise, and Miracle Whip(R) in a bown until evenly blended. Stir in the remaining ingredients, then gently fold in the cubed potatoes.
3. Refrigerate until ready to serve.Substitution
If Andoullie sausage is unavailable, you can substitute with summer sausage or any kind of link sausage.
