|800 g||chicken breast|
|200 g||mushrooms, sliced|
|800 g||tomatoes, peeled|
|freshly grated Parmesan cheese|
|salt and pepper|
InstructionsSeason the chicken with salt and pepper.
In a saucepan, heat the butter. Fry the chicken over medium heat until golden all around. Add the onions and the mushrooms and cook over low heat until soft. Stir in the tomatoes. Season to taste with salt, pepper, rosemary and basil. Cover and simmer over low heat for 20 minutes. Remove the meat, set aside and keep warm.
Stir in the rice. Cover and simmer over low heat for 15 minutes or until the rice is done. Add some water, if necessary.
Arrange the chicken on top of the rice pot and sprinkle generously with Parmesan cheese.
