Italian sausage with peppers and rice recipe details
Pan fried Italian sausages are layered into this hearty casserole and topped with plenty of Cheddar cheese.

Ingredients
Serves: 6- 1-1/2 pound Italian sausages
- 1 onion, thinly sliced
- 1 sweet pepper, cut in thin strips
- 2 cloves garlic, minced
- 1 large tomato, coarsely chopped
- 2 teaspoons thyme
- 1/2 cup fresh chopped parsley
- salt and pepper to taste
- 1 cup long grain rice
- 1 cup shredded Cheddar cheese
Preparation method
Prep: 20 mins | Cook: 40 mins1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet, brown sausages over medium-high heat. Remove sausages, drain on paper towels and cut into slices.
3. Pour off all but 2 tbsp. of fat and cook onions over medium heat until tender. Add peppers, garlic, tomatoes and thyme. Cook uncovered for 15 to 20 minutes. Stir in sausage and parsley, season with salt and pepper.
4. Cook the rice until tender and spread half of it in a lightly greased 9×13-inch pan. Cover with half the sausage mixture and repeat layers. Sprinkle with cheese.
5. Bake uncovered 30 to 40 minutes or until heated through.
