Ingredients
900 g | flour |
1 pinch(es) | salt |
50 g | butter or lard |
115 g | caster sugar |
1 tsp | allspice |
1 pinch(es) | ground cloves |
1 pinch(es) | freshly grated nutmeg |
280 ml | milk |
15 g | active dry yeast |
60 g | currants |
1 tbsp | sugar |
¼ tsp | cinnamon |
caster sugar, mixed with ground cinnamon | |
oil, for frying |
Instructions
Sift the flour and salt into a bowl. Rub in the butter or lard until the mixture resembles fine breadcrumbs. Add the sugar and spices. In a saucepan, warm the milk, then sprinkle over the yeast and leave until frothy. Add the yeast mixture to the flour. Knead to get a firm dough.On a lightly floured surface knead for approximately 10 minutes until a smooth dough forms.
Transfer the dough back into the bowl, cover with a tea towel and leave to rise in a warm place for 1.5 hours. When doubled in size, knock it back and knead again.
Form the dough to balls. Combine the currants, sugar and cinnamon. Make a small hole into the balls and insert a little of the mixture. Seal the hole with the dough.
Allow to rest at a warm place for 10 minutes.
In a saucepan heat the oil and deep-fry the the doughnuts in batches until golden brown on both sides.
Drain on kitchen paper.
Toss in the caster sugar and cinnamon mixture and serve fresh.
