Ingredients
Serves: 4- 1 tablespoon olive oil
- 1 red bell pepper, chopped
- 2 tomatoes, seeded and chopped
- 1 cup salsa
- 1 (4 1/2 ounce) can green chiles, drained
- 1/2 teaspoon ground cumin
- 6 eggs
- 1/4 cup shredded Cheddar cheese
- 6 (8 inch) flour tortillas, warmed
- 2 tablespoons chopped cilantro
- 1 avocado, peeled and chopped
Preparation method
Prep: 10 mins | Cook: 15 mins1. Pour oil into a skillet and set over medium heat. Cook bell pepper in hot oil for about 3 minutes, then stir in tomatoes, salsa, chiles, and cumin. Cook for about 10 minutes to thicken.
2. Break eggs into the hot tomato mixture, keeping the yolk intact. Sprinkle with cheese and place a lid on the skillet, then cook for about 4 minutes to cook the eggs.
3. Fill tortillas with eggs, sauce, cilantro, and avocado. Serve.
