- 1 tablespoon olive oil
- 1 red bell pepper, chopped
- 2 tomatoes, seeded and chopped
- 1 cup salsa
- 1 (4 1/2 ounce) can green chiles, drained
- 1/2 teaspoon ground cumin
- 6 eggs
- 1/4 cup shredded Cheddar cheese
- 6 (8 inch) flour tortillas, warmed
- 2 tablespoons chopped cilantro
- 1 avocado, peeled and chopped
Preparation methodPrep: 10 mins | Cook: 15 mins
1. Pour oil into a skillet and set over medium heat. Cook bell pepper in hot oil for about 3 minutes, then stir in tomatoes, salsa, chiles, and cumin. Cook for about 10 minutes to thicken.
